Edomae or Tokyo-style sushi called nigiri is an art form in the hands of Chef Okada, the fourth generation chef at restaurant Ginza Sushi-ko with over 130 years of history. In this 2 week course, students will start by taking the essential 5 Day Basic Japanese Cooking Skills Course with Chef Yoshida at TOKYO COOK’S kitchen. Because basic cooking techniques are needed to prepare not only neta (fish toppings), but also rice and other sushi preparations, this one week course is required. For the second week, students will transfer to Ginza Sushi-ko to continue the course. Here they will delve into an immersive sushi experience with Chef Okada starting with how to properly cook and prepare sushi rice; expert instruction into methods for cutting fish will top the agenda; and the proper way to create the iconic nigiri.

Preparing nigiri with Chef Okada at Sushi-Ko

Week 1: Basic Japanese Cooking Skills.

Week 2: This class provides fun and exclusive experience of sushi cooking.

In this class, participants will visit Restaurant Sushi-ko and observe details of preparation cooking behind a delicious sushi such as rice or fish preparation. Even the step mixing vinegar in rice, you'll be amazed how much Master chefs and his apprentices are caring details. Along with watching sushi craftsman techniques, Chef Okada will teach how to slice topping fish from filet, how to make several types of sushi such as Nigiri and Gunkan by hands-on. The lesson will be conducted at Sushi-ko sushi counter and its kitchen. While class, students can enjoy sushi made by the Master in addition to sushi made by their own.
